(Appellation d’ Origine Controlee) Grape Type: Sauvignon Blanc, Sémillon and Muscadelle Colour: White Vineyard: The vineyard of Château Olivier is located 11 km from Bordeaux, in the heart of a field of 210 hectares consisting of meadows around the castle, century-old oaks, pions and a vineyard of 50 hectares. The average age of the vineyard is 20 years old. The soils and basements are serious Guziennes and clay-limestone. The grape variety is Sauvignon Blanc and Sémillon The work in the vineyard is traditional, and “green” operations are conducted at the castle: leaf stripping, manual harvesting. Wine – Making Process: To produce the white wine of Chateau Olivier, 33% of the berries are allowed skin contact before fermentation. Vinification begins in tanks and is finished in French oak barrels. The wine is aged on its lees for 9 months before bottling. Features: The Sémillon wines are very aromatic with nuances of almond and quince. The Sauvignon Blanc wines are perfectly ripe and even round this year. The blend of these two grape varieties gives body to the final blend, which is vivacious and has a lovely bouquet. Thanks to good acidity, it also has a beautiful long aftertaste.
