Description According to mythology, Neptune plunged his trident into the depths of the sea, pulled out a cetacean and laid it at the entrance to the little gulf of the Mediterranean… The cetacean, a whale with the nose of a dolphin, was instantly petrified upon seeing the god of the sea, thus giving the town of Sète its name. Harvested by night to keep the freshness, each vineyard lot is carefully and gently pressed, keeping only the free run & very low pressure juices for the pale and delicate color. The lots are then fermented separately at low temperature for more finesse & purity. After 1 month of maturation on fine lees, ageing with battonage (for the texture), each component is blended to create the Fortant signature. Vivacious nose with notes of redcurrant and thyme. Delicate on the palate, revealing lovely citrus and red berry flavors and boasting a long fresh finish.
